The garlic, the butter, and the parmesan you add at the end are what make this taste like Alfredo. The cottage cheese simply carries all of it.

  • Add off heat — stir in the parmesan

    Remove the pan from the burner completely. Pour in your blended cottage cheese mixture and stir gently. The residual heat in the pan is enough — you do not need the flame. Fold in ¾ cup of freshly grated parmesan and a pinch of nutmeg. Stir until the parmesan melts and the sauce turns glossy. Taste it. Adjust salt and white pepper. Toss with your cooked fettuccine, splash in a little pasta water to loosen, and serve immediately. That is it. That is the whole recipe.
